How is everyone’s January going?

It is still January?

The last couple of weeks have been just flying by…ha! I mean I have been flying a lot and hardly at home.

Last week I went out to North Carolina to help Kelsey meal prep for baby so that when she finally came they wouldn’t have to worry about making meals for a week or two. We were able to get together with friends for dinner one night for a little pre meet up before baby and also have a game night. With a little time spent at the park as well for the kids where the oldest niece of mine decided that that would be a great opportunity to try and set her aunt up with a single dad who was at the park with his daughter. It’s hit a new level my friends. My niece is now trying to set me up with random people. I’m not sure if I should laugh or cry or both.

I mean my mom letting me know that she wants grandkids is expected, your niece telling you she needs playmates from you is a whole new level.

Anyone else experience this before?

Anyways instead of going out there and looking for single dads, while I had been meal prepping and looking up casseroles dishes for Kelsey and family. It got me really thinking about meal prepping for myself for work.

The ever challenge of rotating out meals with out getting bored, being healthy and being able to travel well for four days and most of all budget friendly.

So up on the menu I have:

Morning Glory Muffins- GF -Paleo Running Momma

Veggie Egg Casserole -From Little Spice Jar

Spinach Artichoke Quinoa Casserole – Simply Quinoa

Chili Black bean & Lentil Chile -Midwest Foodieblog

Sweet Potato Black Bean Casserole – Kim’s Cravings

I am hoping that the casseroles and Chile will get me through two or three work trips.

I have already had the Morning Glory Muffin and these will be up on the rotation from now on. Rather than regular flour you make it with Almond flour which I was a wee bit skeptic on but they came out beautifully. I will probably add less of the sugar since there is honey and applesauce in them.

I found all these recipes through Pinterest and I was surprised by how many vegetarian casseroles I was able to find that weren’t overly complicated to make.

If any of you have any suggestions for some casseroles please put those in the comments.

In between all the meal prep today I’ll also be watching WandaVision on Disney+.
